We live in the century of speed, time flies and we hardly manage to cope with the busy schedules. So we have come up with a selection of quick recipes, perfect when you are short of time. Cauliflower in Chinese style with rice
Suggested by Waitrose Cellar, this delicious recipe is super easy to make and perfect for vegetarians. You will need:

  • 1 large cauliflower
  • 1 onion
  • 1 red pepper
  • 200 ml water ginger powder
  • 2 tablespoons flour
  • 2 tablespoons starch
  • 3-4 tablespoons soy sauce
  • 2 tablespoons Worcestershire sauce
  • 250gr Basmati rice
  • 250 g olive oil for frying

Boil the rice as directed on package. Then wash the cauliflower and divide it into pieces. Put the cauliflower in a pot of water, add salt and boil it for about 10 minutes, just enough to soften it. After the rice is boiledput in a bowl and finely chop the onion and pepper. In a separate bowl put water, soy sauce, Worcestershire sauce, flour, starch and mix until they take the form of a slightly thicker dough similar to the one of the pancakes. Pass the cauliflower through the composition. In a pan put oil and when it is warm enough, add the cauliflower and fry it for a little while until its colour becomes brownish.

Penne Quattro Formaggi
Fancy some Italian flavour for tonight, yet something easy to prepare? Penne Quattro Formaggi is the answer. Easy to make and delicious, this cheesy meal will be a delight for you and the kids.

Ingredients:

  • A package of pasta (if you do not have Penne, you can use tagliatelle)
  • A cube of Emmental
  • A cube of Brie
  • A cube of Gorgonzola
  • Grated parmesan cheese
  • 1 chopped parsley/basil
  • A glass of milk or heavy cream (not whipped liquid Attention!)
  • 1 tablespoon flour
  • 1 diced butter
  • Salt
  • Black pepper

Put the butter in a hot saucepan and add cream. Leave it a little on a minimum heat without boiling and gradually add the Emmenthal cheese, parmesan and gorgonzola. The sauce will be ready within 5 minutes.

Boil the penne according to the time indicated on the box / bag and finally sneak them through a sieve and put them in cheese sauce, mixing them well. Serve them with fresh basil or parsley.

Chicken Valdostana
For chicken lovers, Valdostana will be a light delicious choice for dinner!

Ingredients:

  • 3 pieces of chicken breast
  • Slices of smoked bacon
  • 6 slices cheese
  • 1 glass of white wine Waitrose Cellar
  • 1 clove of garlic
  • 6 tablespoons flour
  • 1 bunch sage
  • 1 pinch salt, pepper
  • 1 cup olive oil

Divide the chicken in half and season it well with salt and pepper. Pass them through the flour and fry them, on both sides, along with garlic until it is uniformly colored.
The roasted chicken breasts are transferred into a baking pan, add the bacon or fillet slices on top and put them in a preheated oven at 180 ° C for 5-10 minutes.
In the meantime, add few drops of olive oil in a saucepan, add the sage, leave it for a minute and then add the glass of white wine. Let it boil for a little while until it thickens.
Remove the tray from the oven, pour the wine sauce over and place the cheese on top of each chicken individually. Put the tray back in the oven until the cheese melts and becomes golden.
You can put the chicken on a lovely bed of ruccola, decorated with fried or boiled mushrooms.

Mushrooms with quinoa and spinach
Mushroom with quinoa and spinach is perfect for this time of year and beyond, representing a complete lunch which brings a burst of vitamins and nutrients for the body.

Ingredients:

  • 1 box of mushrooms
  • 100 grs of quinoa
  • 200 ml water
  • 100 grs spinach
  • Leek
  • 3 garlic cloves
  • Chives
  • Sea ​​salt
  • Pepper
  • 4 tablespoons olive oil

Wash quinoa until the water remains clean. Put the quinoa in water and cook until all the water will be absorbed and quinoa will expand its volume about four times.
In a different saucepan, slightly pry the chopped leek, garlic and mushrooms. Season it with sea salt and pepper. Before removing the saucepan of the heat, add the spinach just so you can soften it. Once it is done, add the quinoa, stir well and serve it!

Chicken breast with peach and cheese
This baked chicken steak, with juicy peach and cheese is absolutely delicious. It is a Slovak combination, given that Slovaks eat rice with fruit compote. As you know, rice may cause constipation, so mixed with fruit will help the digestion. Do not worry, the combination may seem odd, but we guarantee you a lovely taste. The chicken breast goes well with rice and is suitable for weekend lunches with the family.

Ingredients:

  • 2 chicken breasts
  • 8 slices of peaches
  • 8 slices of cheese
  • Olive oil

Before making any preparations, fry the chicken breasts in few drops of olive oil and season them with sea salt, pepper or any condiment you may prefer.Once the colour of the chicken breast is slightly golden, put it on a tray, add the slices of peach and at the end, add the cheese. Put the tray in a preheated oven (200°C) and leave it for about 10-15 minutes.

When the cheese is melted, place the chicken next to the rice and ornate it with parsley or any other leaves you may prefer.
