Chocolate Avocado Cookies

The cookies have around 30 calories per cookie, but they are filling and big, so having one or two cookies as a treat will definitely be enough. The recipe also allows you to substitute brown and granulated sugar with erythritol, if you are trying to avoid sugar.

  • 2 ¾ cup almond flour + ¼ cup coconut flour
  • ½ tsp. Salt
  • 1 tsp. Baking soda
  • ½ cup sugar/sugar substitute
  • ½ cup brown sugar/sugar substitute
  • ½ cup unsweetened cocoa powder
  • ¼ cup mashed avocado
  • ¼ cup unsweetened almond milk
  • 2 tsp. Vanilla extract
  • 2 eggs

You essentially need to just mix all the ingredients together, either whisking by hand or with an electronic mixer. Scoop the dough into balls the size of half a tablespoon and bake in the oven. The cookies only need around 12 minutes in the oven and they stay good for a week!

Chocolate Brownies

Brownies are a dessert nearly everyone loves. Who could say no to a chewy, soft lump of chocolate goodness? But generally, these dream treats pack quite a bit of calories. But it’s possible to enjoy brownies that see your calorie count for the day diminish by just 37 calories.

To make nine dreamy brownies, you’ll need:

  • ¾ cup non-fat Greek yogurt
  • ¼ cup skimmed milk
  • ½ cup cocoa powder
  • ½ cup rolled oats, such as Quaker
  • ½ cup stevia based sweetener
  • 1 egg
  • 1 tsp. Baking powder
  • Pinch of salt

To make the muffins you need:

  • 2/3 cup rolled oats
  • 1 scoop of Vanilla-flavoured Whey protein
  • ½ cup peanut butter, preferable powdered
  • ½ tsp. Baking powder
  • ½ tsp. Cinnamon
  • 2/3 cup mashed bananas
  • ½ cup blueberries
  • 2 egg whites
  • 3 tbsp. Unsweetened vanilla almond milk

Use a blender to powder the rolled oats, after which you can combine everything except the blueberries. After everything is mixed, fold in blueberries carefully. For the creamy mixture, you’ll need:

  • 4 avocados
  • 1 cup lime juice
  • 2 Lime zest
  • 1 cup maple syrup
  • 2 cans coconut cream
  • 2 tsp. Vanilla extract
  • 2 tbsp. Coconut oil
  • ½ tsp. Salt
  • ½ lime for garnish

Combine the ingredients in a blender, excluding the lime for garnish. You’ll need to use the highest setting to ensure the mixture becomes smooth. Pour into a loaf pan and garnish with the lime. Freeze for at least 3 hours, but it’s better to keep frozen overnight.
